Passover baking requires Kosher for Passover matzo meal flour or non-wheat flours like potato, rice or almond. Passover baking is easy with these five ingredient Passover puffs (6 ingredients if you add parsley). Bake now, freeze and reheat for your seder or during Passover week.Â
You’ll need water, butter or margarine, salt, eggs and matzo meal.Â

One recipe makes 36 mini or 12 regular muffins.

Melt butter with water and salt.
|
Add hot liquid to matzoh meal, then add in eggs.

Parsley is a symbolic Passover herb. Parsley’s optional here but adds a nice pop of color.Â

Without parsley, warm Passover puffs are perfect for breakfast. Serve with butter, honey and jam like these ginger fig preserves.

PLEASE: Does anyone have a recipe for GLUTEN FREE Passover Puff “Rolls” that actually works? Made the regular kind for years for the holiday, but now that Celiac Disease has reared its ugly head and two of my kids are medically gluten free, I haven’t succeeded in baking a gluten free version of this recipe that doesn’t end in frustration and disaster! I’ve tried using the gluten free matzo meal and gluten free cake meal that are now available, but the cooked mixture is too gummy and oily to incorporate the eggs, the end product can’t be shaped well, and the result was blobs like lead weights or rocks. Would adding xanthan gum help, and if so, how much per cup of gluten free matzo meal and cake meal? Awaiting ur helpful response ASAP. Many thanks!

My advice: ditch the gluten free pareve= friendly matzo meal and choose instead a fine almond flour based version, like my almond flour and honey sandwich bread : https://diginwithdana.com/2017/03/almond-flour-and-honey-sandwich-bread.html
Could you use an alternate flour during Passover like quinoa flour or chickpea flour instead?
