Just four ingredients: feta, lemons, garlic and oil serve as a base to make a variety of dressings, sauces or condiments.

All cooks need inspiration. This recipe comes from Sweet Paul magazine and is his most popular, most pinned recipe EVER.

Who knew that you could take salty, creamy lemony feta in so many directions?

If you don’t have a food processor, mixer or blender, just bring the feta to room temperature and mix by hand.

Change the spice, change the dip!

Replace pepper flakes with any one of these flavors:

  • herbs like mint, thyme, rosemary (a tablespoon fresh or 1 teaspoon dried)
  • chopped olives
  • chopped dried figs or cherries (leave out garlic)
  • chopped nuts (like walnuts)
  • cracked black pepper or pepper blend

Viva variation!

Instead of feta, try another soft cheese like Cotija or cream cheese.

Add: lime zest/juice + olive or avocado oil + a pinch each of smoked paprika and cumin seeds.

Serve with chips and salsa for a dip that’s delicioso.

Other serving ideas:

  • Appetizer: Serve with raw veggies, crackers or pita.
  • Salad Dressing:  Thin dip with olive oil and toss with lettuce, cucumbers and tomatoes.
  • Main Course: Use as a zesty sauce for meat, chicken or fish.
  • Sides: Add a dollop to baked potatoes or roasted vegetables.
  • Elegant Casserole: Mix with cooked rice or pasta and bake at 350 F until golden.

It’s a dip, a sauce, a dressing. Use the base of feta cheese, lemon, garlic and oil to create endless variations for snack and meal planning. Based on Sweet Paul’s Famous Feta and Lemon Dip. So good, you might want to double the recipe!

Ingredients

  • 7 oz feta cheese, cubed or crumbled
  • 1 tablespoon grated lemon zest
  • 1 or 2 tablespoons fresh lemon juice, plus more for decoration
  • 1/2 teaspoon fresh or roasted garlic, finely chopped
  • 6 tablespoons good quality olive or avocado oil, plus more for garnish
  • pinch of red pepper flakes (or sub fresh herbs like chopped mint)
  • optional garnish: finely chopped sun dried tomatoes

Instructions

  1. Measure out all ingredients and place alongside a food processor or mixer.
  2. Combine feta, lemon zest, 1 tablespoon lemon juice, garlic and oil in food processor or mixer and blend until well combined but slightly chunky. Stir with a spoon to check texture and taste. If too salty, add in a bit more lemon juice.
  3. To serve, spoon dip into a bowl. Decorate with lemon zest, a dash of red pepper flakes and chopped sundried tomatoes.
  4. Appetizer: Serve with raw veggies, crackers or pita.
  5. Salad Dressing: Thin dip with olive oil and toss with lettuce, cucumbers and tomatoes.
  6. Main Course: Use as a zesty sauce for meat, chicken or fish.
  7. Sides: Add a dollop to baked potatoes or roasted vegetables.
  8. Elegant Casserole: Mix with cooked rice or pasta and bake at 350 F until golden.
