Strawberry “Spiked” Limeade

Strawberry “Spiked” Limeade turns a pitcher of lime or lemonade into a par-tay. Use fresh squeezed limes/ lemons and simple syrup or a ready made version.

Ingredients

  • 1 cup white, granulated sugar
  • 4 cups water, divided
  • 1 cup lime or lemon juice (12 small or 6 large limes/lemons)
  • 1 cup alcohol (lime or lemon liqueur or vodka) (or sparkling water or Sprite)
  • 1 pint strawberries, divided (Slice 6+ berries for the pitcher, reserve rest for ice cubes/garnish)
  • 1/2 pint blueberries
  • plenty of ice

**Ready made substitution: Instead of simple syrup and limes, use one 12 oz. can frozen lime or lemonade concentrate, defrosted.

Instructions

Make “simple syrup”: In a small saucepan, bring sugar and 1 cup water to a simmer. Stir until sugar  is completely dissolved. Set aside and let cool.

Squeeze limes/lemons. Strain pulp and measure out 1 cup juice.

In large pitcher, combine simple syrup, juice and 3 cups cold water. Refrigerate until ready to serve. (Limeade will taste very concentrated but will dilute when mixed with plenty of ice.)

Optional: Make berry ice cubes. Fill one or two ice cube trays with slices of strawberries and/ or blueberries. Add water and freeze overnight.

Just before serving, stir together cold limeade, alcohol, sliced strawberries and a handful of blueberries. Fill glasses with berry ice cubes if using and pour in limeade.

Extras: Set out a bucket of extra ice and whole strawberries for guests to enjoy.
