You can make a dessert tray look really professional with a few chocolate covered berries and cookies. Melt your favorite chocolate wafers according to package directions. Dunk strawberries as well as some of your cookies in the melted chocolate for extra variety. Throw in raspberries and blackberries for color.
Plan ahead! You can make the cookie dough a week or two in advance, roll the dough into balls or scoops and freeze the uncooked cookies. On the day of your dinner or event, just bake the cookies as usual, but add an extra 2-3 minutes cooking time. Frozen cookie balls keep their shape and look very pretty when baked.
You can bake brownies and shortbread bars weeks ahead too. After baking, cool completely and then wrap well in several layers of plastic wrap. Use a permanent marker on a sticker to label the item and date it; for example: Lemon Shortbread Bars 3/30/15. The day you are ready to serve, take out the bars and cut them while they are still partially frozen for the prettiest squares or triangles.
